The original name for Core i7 mobile processor and Core i7 mobile processor extreme edition is Clarksfield. Intel said they company wants to focus these two processor on laptops, mainly for of gaming laptop and entertainment laptops.
From what i read, Core i7 mobile processor and Core i7 mobile processor extreme edition was initially designed to handle high performance task, so i bet gaming and heavy digital entertainment suits well on them, maybe other extreme laptop activities can be handled well too such as digital imaging, animation, creative image creation, network analysis and website building.
